Blueberry Buckle
Ingredients
2 heaping cups blueberries
1 1/2 TB lemon juice
3/4 cup sugar
3 TB butter, softened
1 cup flour
1 tsp baking powder
1/4 tsp salt
1/2 cup milk
Topping:
1/2 cup sugar
1 scant tsp cinnamon
1 tsp cornstarch
1/2 tsp salt
1 cup boiling water
Directions:
Preheat oven to 400 degrees.
Grease 9 by 9 baking dish. Place berries in baking dish and sprinkle with lemon juice. Cream sugar and butter until well combined. Add flour, baking powder, and salt a little at a time alternating with milk. Spread gently over the berries so berries are completely covered.
Topping- Mix sugar, cinnamon, cornstarch and salt. Sprinkle over the batter. Slowly pour the boiling water over the top and immediately place in oven for 30 minutes, then reduce heat to 325 and bake for an additional 12 - 15 minutes. Serve with cream or ice cream. Serves 6-8
