Best Salmon
Ingredients:
- 1/4 cup orange juice
- 2 TB balsamic vinegar
- 1 tsp dijion mustard
- 1 TB olive oil
- 1 tsp chopped onion or shallot
- 1 small garlic clove, diced or crushed
- 2 tsp parsley
- salt and pepper to taste
- salmon (up to 3 lbs)
Directions:
Preheat oven to 400. Spray or coat baking dish with olive oil and place salmon in dish. Combine all other ingredients and pour over fish. Bake 12 to 15 minutes until internal temperature reaches 140. The thicker the fish the longer the cooking time. Salmon will continue to cook as it rests.
